Well hello again, Baked fiends. Maybe I should have titled this “Baked Tuesday Mornings”, but late is better than never, right? I haven’t exactly been loafing around since my last Baked creation, but between the Cookie Takedown, holidays and family visiting, my time for baking and writing about it has been greatly reduced.
Back again, with another rich, chocolate creation from the book. The Double Chocolate Loaf with Peanut Butter Spread actually got stuck in my head for a slightly crazy reason… Peanut Butter & Co’s “The Heat Is On” is a spicy take on classic peanut butter that I use mostly for savory noodle dishes. Except this time.
Rich, molten river of chocolate, dense cocoa cake, creamy peanut butter spread, quite the bite at the back of the mouth. Crazy, right? Crazy good! If you’re a fan of a spicy hot chocolate or a good spicy peanut noodle dish, mixing up a little bit of spicy peanut butter spread is so very worth it. To try the cake in it’s full glory, I mixed up a little bit of the original recipe as well.
For all the delights that the Baked cookbook brings me, very few recipes come across this simply. But this loaf cake is a straightforward, one or two bowl creation. And if you halve the recipe, it makes two small loaves. [Side note: just don’t follow my lead and try to fit it in one mini loaf pan. It will ooze over, drip, make your cake rather unsightly.
